When the World Discovered the Pleasure of Sweetness

Have you ever wondered how we can enjoy creamy ice cream or keep a perfect cake fresh for days? The answer lies in a series of 19th-century discoveries that radically transformed pastry making. During the Napoleonic Wars, the British naval blockade led to a critical shortage of cane sugar in Europe. Faced with this need, Napoleon promoted a revolutionary invention: extracting sugar from beets. In 1811, Benjamin Delessert presented the emperor with sugar loaves made from beets, immediately receiving the Legion of Honor. Napoleon ordered the planting of 32,000 hectares of beets and the construction of numerous refineries, democratizing access to sugar, which until then had been an aristocratic luxury.

 

At the same time, another technological advance would change the industry forever: refrigeration. In the 19th century, the lack of efficient refrigeration systems posed a huge challenge for pastry chefs, who had to whisk by hand and work in conditions that severely affected the quality of their products. The invention of the first refrigeration units in 1875 by Charles Tellier and Ferdinand Carré marked a turning point. For the first time, temperature could be precisely controlled, facilitating the production of chocolate bars, delicate creams, and new preparations that were previously unimaginable.

 

The 20th century consolidated these advances with the mastery of cold, heat, fermentation, and preservation. The introduction of efficient refrigeration and new cooking methods exponentially increased the productivity and quality of confectionery products. Innovative ingredients such as cocoa powder and fondant also emerged, allowing pastry chefs to unleash their creativity. From those primitive honey sweets in Ancient Egypt to sophisticated contemporary creations, confectionery has evolved as a testament to human ingenuity and our eternal quest to sweeten life.
